Vanilla Cinnamon Marscarpone Gelato – A New Summer Favorite!

I love ice cream – LOVE IT.  A few years ago, my mother bought me the ice cream maker attachment for my Kitchenaide mixer.

I have not used it much and I was determined to find some ice cream recipes this summer and try to lighten them up. I thought that the 4th of July might be a good time to try a recipe out.  Who better to make gastronomic guinea pigs than your own family – right?  I previously tried to make a low fat version of a mint chip ice cream from a mix – not so good.  I pulled out all of the stops and bought a book at my local Costco.

I picked out a recipe and then I made it my own.  My recipe is is based on the Marscarpone Vanilla Gelato with Pine Nuts recipe found in the book.  I played with it some and made it into a slightly lower fat vanilla cinnamon gelato and served it with apple pie on the 4th of July.  Here is the recipe as I modified it:

Vanilla Cinnamon Marscarpone Gelato 

2 cups 2% milk

1 1/3 cups whipping cream

2/3 cups of fat free half and half

1 cup of sugar

16 oz marscarpone cheese

2 vanilla beans

2 cinnamon sticks

Bring the sugar, milk and cream to a simmer over medium heat stirring constantly until the sugar dissolves and bubbles form around the edge of the saucepan.  Remove from heat.

Split the vanilla beans and scrape out the seeds.  Drop the seeds, pods and the cinnamon sticks into the milk/cram mixture.  Let stand for at least 30 minutes or until cool.  Strain through cheese cloth into a clean bowl, cover and let cool completely in the refrigerator   Make sure it is very cold.

Stir in the marscarpone cheese with a wisp until smooth.  Transfer to an ice cream maker and freeze according to the manufacturers directions.

Next time I am going to try a cup of fat free half & half and a cup of cream.  I want to be lower fat, but still creamy. I am sure it would be great with some mini chocolate chips or strawberries stirred in.

It was great with the pie, but I like it this way too!
