Try This at Home – Recipes

While in Morro Bay this weekend, I wanted to make my mother and father-in-law some comfort food since neither of them are currently able to cook very much.  I know they like lasagna so I put together this recipe.  Everyone seemed to enjoy it.  I made the sauce myself, but if you are in a hurry, you could use bottled pasta sauce and add the meat to it.

Terri’s Meat Lasagna for a Crowd


Olive Oil

½ cup Pancetta, 6 slices of bacon or 2 Tbs bacon grease

1 ½ chopped onions

4 cloves or garlic finely chopped or made into a paste

3 Tbs anchovy paste or 2 anchovies

2 28 oz cans of good quality crushed tomatoes

2- 3 Tbs dried Italian Herbs

2 cups chopped mushrooms

salt and pepper

1 lb of sweet or hot Italian sausage (turkey or pork)

1 lb ground beef (85 or 90% lean) – you can also use ground turkey

Saute pancetta or bacon in 2 tbs olive oil to render the grease from the bacon/pancetta.  Once the grease has rendered (you should have 2-3 tbs of grease/oil) add the onions and saute until translucent, stirring so they don’t burn – you can add a little more olive oil if needed.  Add the garlic and cook for 3 minutes.  Add the anchovy paste or anchovies and cook for 5 minutes.  Add the tomatoes and Italian herbs.  Stir well and simmer for 1 hour stirring occasionally.  Meanwhile take the sausage out of the casing.  Brown the sausage and ground beef in a pan.  After the sauce has simmered for 1 hour, add the mushrooms and meat.  Simmer for an additional hour or more, stirring occasionally.  Add salt and pepper to taste.


2 cups cottage or ricotta cheese (can use low fat)

1/2 cup chopped basil

¼ cup chopped parsley

1 box chopped spinach, thawed, drained and squeezed dry

2 eggs

2 egg whites

Salt and Pepper to taste

Mix above ingredients well and set aside (refrigerate if you are not ready to make the lasagna).

Other ingredients needed:

1 box of lasagna noodles

10 – 16 oz mozzarella cheese – grated

8 oz of italian blend cheese  (parmesan, asiago, romano)

Cooking spray


Preheat oven to 400 degrees.  Boil noodles according to package directions.  Spray a lasagna pan (or large baking pan) with cooking spray.  Assemble lasagna starting with a layer of meat sauce, followed by a layer of noodles, followed by more meat sauce, followed by a layer of filling, sprinkle with some cheese blend and mozaralla, another layer of noodles, meat sauce, filling, cheese mixture, mozzarella.  continue until you have enough meat sauce for a final layer.  End with the layer of meat sauce.

Put in the oven and back until bubbly.Once it begins to bubble and is heated through, add a final layer of cheese and return to the oven.  Bake until the cheese is melted and gooey. Enjoy – this makes a large pan of lasagna.
