Meatless Monday

Today's meatless dish is a lighter, simpler alternative to chiles rellenos which are typically fried.  Don't get me wrong, traditional chiles rellenos are delicious.  If you have no concerns about fat or calories, go for the real thing.  For me they are a nice treat sometimes.  These stuffed chiles give you similar flavors and textures, with a fraction of the fat and calories. Meatless Monday

Todays meatless creation was Brazilian Black Beans. I served the dish with brown rice and garnished with low fat cheese, avocado, heirloom tomatoes, scallions, cilantro, chili paste and lime. My husband skipped the chili paste and lime. I am a big fan of hot food and really like lime so for me these were key. He enjoyed the dish without. Meatless Monday

I love the Food Network.  Left to my own devices I would  watch it for hours and hours on end.  I am not often left to my  own devices so usually I watch the Food Network when I am folding laundry, changing the sheets on the bed or involved in some other equally stimulating household chore.
