Eggs with Italian Inspired “Hash” and a Little Something Extra

When it is hot outside, I don't feel like cooking.  Fancy is out of the question.  What's on hand is what's going to be on the plate.  It is August and I am in Southern California so it is hot!  My organic farm box came this week and in it I found leeks, chard and mushrooms.  I had eggs, pine nuts, pasta sauce and parmesan cheese on hand so we didn't have to go hungry or go out. Woot woot! This dish can be modified a million different ways so give it a try the next time you need something … [Read more...]

Meatless Monday – Light and Fresh Eggplant Parmesan

In my ongoing  and sometimes seemingly futile effort to eat well and enjoy food that tastes good, I created a new recipe to satisfy my craving for Eggplant Parmesan without totally blowing my diet.  I made my version meatless because I happened to have meatless Italian sausage on hand.  It's an easy recipe - I cheated and used bottled pasta sauce. it was quite tasty and did not break the calorie bank.  I hope you enjoy it as much as I did.  If you want to indulge go for it - use real italian … [Read more...]

Spaghetti Squash (or Not) Vegetarian (or Not) Casserole

So - in an effort to eat more healthfully I was inclined to buy some spaghetti squash at Costco.  It may have been sort of an impulse buy - I had never seen spaghetti squash at Costco before and they were super inexpensive.  So then I had 2 huge spaghetti squash and I needed to figure out what to do with them. I was not having an extra creative day so I decided on faux spaghetti and meatless sauce (since I also bought a jumbo sized package of meatless Italian “sausage” at Costco a while … [Read more...]

Meatless Monday – Huevos Rancheros with a Quinoa Twist

As part of my quest to improve my health and  lose some weight I've been trying to cook more and eat out less.  I also am trying to eat more vegetarian meals and less red meat.  In order to do this, I have been reviewing cook books and recipes for inspiration for new dishes. I recently came up with this recipe which is a take on Huevos Rancheros.  We had it for a couple of dinners and lunch (since we are only 2 people and it serves 6) but would also make a tasty breakfast or brunch.  It was … [Read more...]

Golden Squash Bisque + 1 = Yum

Have you ever found yourself with three squash and no idea where they came from?  I must not be the only one this happens to.  It happened recently and I wanted to use them before they went bad - they were to pretty not to use.  I decided to make a squash bisque.  It turned out quite nice.  I decided to serve it with cinnamon and salt spiced edamame and egg sandwiches.  It was a  cozy, warm meal on a cool winter evening. Golden Squash Bisque Serves 4 1 Butternut Squash 1 Acorn … [Read more...]

Sweet and Spicy Southwest Salad

I went shopping last week and planned to prepare meals for the week, but the weekend took a strange turn which caused me to have to go into work leaving me no time to cook.  Today I took stock of what I had in the refrigerator and pantry from last week. I went about cooking for the week ahead.  This week I was not interrupted and ended up with several meals prepared for the week. Tonight we had tacos and the salad I made up using ingredients that I had on hand.  It was quite tasty.  I hope … [Read more...]

Meatless Monday

It has been pretty hot the past couple of weeks so we have been eating a lot of salads and sandwiches for dinner.  Not a lot of actual cooking has been going on in my house. My organic farm box came Thursday and included a variety of vegetables.  I looked in the refrigerator to see what else might be hanging around and discovered that I still had half a jar of homemade tomato sauce.  I challenged myself to come up with something new to cook for dinners this week that did not require turning … [Read more...]

Tuesday’s Tomato Sauce

My dad grows amazing tomatoes in his garden every year. He coaxes them to life in little containers, often in the living room, until they are old and strong enough to move outside into the cruel Southern California weather. He waters and tends them with care until they are beautiful thriving plants with gorgeous red tomatoes, and then he promptly gets into his RV and takes off with my Mother for the summer before he can truly enjoy all of the fruits of his labor. More tomatoes for me! I love my … [Read more...]

It’s Ash Wednesday – Let’s Eat Potato Soup!

Today is Ash Wednesday, which for people or certain faiths is a day of fasting and abstaining from eating meat.  I didn't do so well with the fasting  - I had a snack before I worked out with my trainer so I didn't die, but I am pretty sure God would be okay with that.  I did plan for the meatless part and made Golden Potato Leek Soup for dinner. Golden Potato Leek Soup Serves 4 1 - 1 1/2 lbs of potatoes cut into chunks 2 shallots, chopped 2 cloves of garlic, chopped 2 - … [Read more...]

Meatless Monday

I like to play with recipes. I like to find a recipe, deconstruct it and put it back together again. Today's meatless Monday recipe is one of those cases where I started with a recipe, used it for inspiration and then changed it up. Spaghetti with Roasted Tomato, Shallot and Garlic Pink Sauce 1 1/2 lbs Roma Tomatoes 6 cloves garlic 2 large shallots 3/4 cups cottage cheese (regular or reduced fat) 3 Lemons 1/8 cup pine nuts EVOO Salt Pepper Crushed red peppers Water 1 lb … [Read more...]
