During the summer I am all about keeping it simple when it comes to cooking.  I also like to use fresh and fun ingredients.  I want my food to taste like summer.  This past week I put together a couple of dishes that taste like summer to me.  Give them a try to see what you think. Souper!

I am a big fan of soup. I like all kinds of soup-Mexican, Chinese, Thai, Italian and down home American (read that with the Southern accent I don't have) to name a few. It is soup season so I will likely be making lots of it. Soup is filling, nutritious and comforting. It is generally a pretty healthy option if you don't load it with cheese, cream or other naughty stuff. While in Morro Bay this weekend, I wanted to make my mother and father-in-law some comfort food since neither of them are currently able to cook very much.  I know they like lasagna so I put together this recipe.  Everyone seemed to enjoy it.  I made the sauce myself, but if you are in a hurry, you could use bottled pasta sauce and add the meat to it.
