A couple of weeks ago we had a pie baking contest at work.  I was a bit apprehensive about entering a pie baking contest since I don't often bake pies. I love ice cream - LOVE IT.  A few years ago, my mother bought me the ice cream maker attachment for my Kitchenaide mixer. Sweet and Spicy Southwest Salad

I went shopping last week and planned to prepare meals for the week, but the weekend took a strange turn which caused me to have to go into work leaving me no time to cook.  Today I took stock of what I had in the refrigerator and pantry from last week. What to do with those holiday leftovers?

The women in my family have an unnatural fear of not having enough food at gatherings. I am not sure where this comes from since we generally always have way more than we need. Om So Good – Pumpkin Pie Overnight Oats

  I have been making overnight oats for my breakfast.  I like these for a few reasons - they are a cold alternative to hot cereal; they include protein, carbohydrates and fiber to keep you full;  and you can make them the night before for a no hassel breakfast in the morning. Meatless Monday

It has been pretty hot the past couple of weeks so we have been eating a lot of salads and sandwiches for dinner.  Not a lot of actual cooking has been going on in my house. Tuesday’s Tomato Sauce

My dad grows amazing tomatoes in his garden every year. He coaxes them to life in little containers, often in the living room, until they are old and strong enough to move outside into the cruel Southern California weather. He waters and tends them with care until they are beautiful thriving plants with gorgeous red tomatoes, and then he promptly gets into his RV and takes off with my Mother for the summer before he can truly enjoy all of the fruits of his labor. This is What’s For Lunch

Weekends have been pretty busy lately.  Today was one of those rare Sundays when I was able to plan and execute a meal plan for the week.  One of the things that I made was a thick soup - or stoup if you prefer - to have on hand for lunch or a quick dinner.  I used up some cooked tri-tip I had in the freezer and some dried beans I had on hand.  I really did not need to go out and buy anything to make this - had everything either in my pantry, refrigerator or freezer.  It made the house smell … [Read more...]

It’s Ash Wednesday – Let’s Eat Potato Soup!

  Today is Ash Wednesday, which for people or certain faiths is a day of fasting and abstaining from eating meat.  I didn't do so well with the fasting  - I had a snack before I worked out with my trainer so I didn't die, but I am pretty sure God would be okay with that.  I did plan for the meatless part and made Golden Potato Leek Soup for dinner. Sunday Dinner on Monday and a Dog

Another weekend sped by. This one had the added twist of Tom and I going to the animal shelter to look for a dog. We went looking for a standard poodle there and found a puggle that we thought might be the one for us only to fall in love with a border terrier mix named Ann Maire.
