Eggs with Italian Inspired “Hash” and a Little Something Extra

When it is hot outside, I don't feel like cooking.  Fancy is out of the question.  What's on hand is what's going to be on the plate.  It is August and I am in Southern California so it is hot!  My organic farm box came this week and in it I found leeks, chard and mushrooms.  I had eggs, pine nuts, pasta sauce and parmesan cheese on hand so we didn't have to go hungry or go out. Spaghetti Squash (or Not) Vegetarian (or Not) Casserole

Sweet and Spicy Southwest Salad

I went shopping last week and planned to prepare meals for the week, but the weekend took a strange turn which caused me to have to go into work leaving me no time to cook.  Today I took stock of what I had in the refrigerator and pantry from last week. Meatless Monday

It has been pretty hot the past couple of weeks so we have been eating a lot of salads and sandwiches for dinner.  Not a lot of actual cooking has been going on in my house. Accidentally Meatless on Kauai

Today starts the second week of vacation for me. We have been on Kauai since last Tuesday and aside from a bit of a head cold, it has been fabulous. I have given up wearing a watch and have mostly not been doing my hair or make-up. These may sound like minor things, but for me they are kind of big things. It’s Ash Wednesday – Let’s Eat Potato Soup!

I like to play with recipes. I like to find a recipe, deconstruct it and put it back together again. Meatless Monday

Meatless Monday dinner got a little sidetracked. I decided to drag my husband out for a short walk in the Dana Point Harbor and we came upon some great Polynesian boats sailing into the harbor so we took some time to take them in.
