Eggs with Italian Inspired “Hash” and a Little Something Extra

Meatless Monday – Spicy Stir Fry with Tofu

My husband bought me a T-Fal Actifry for my birthday. So far I really like it.  At first I was a little dubious about it since it did not appear to be that sturdy, but so far it has cooked up a storm with no problems at all. Meatless Monday Returns!

Today was a truly meatless Monday.  I have been trying to work through some of the food that seems to have collected in my pantry, freezer and refrigerator so in addition to working the meatless angle, I was trying to use things that I had on hand. Meatless Monday

I can't think of anything that makes me think of fall more than pumpkin. I like all things pumpkin - pumpkin pie, pumpkin lattes, pumpkin smoothies, pumpkin ice cream, pumpkin muffins, pumpkin soup - you get the idea. Meatless Monday

Today's meatless dish is a lighter, simpler alternative to chiles rellenos which are typically fried.  Don't get me wrong, traditional chiles rellenos are delicious.  If you have no concerns about fat or calories, go for the real thing.  For me they are a nice treat sometimes.  These stuffed chiles give you similar flavors and textures, with a fraction of the fat and calories. Meatless Monday

Todays meatless creation was Brazilian Black Beans. I served the dish with brown rice and garnished with low fat cheese, avocado, heirloom tomatoes, scallions, cilantro, chili paste and lime. My husband skipped the chili paste and lime. I am a big fan of hot food and really like lime so for me these were key. He enjoyed the dish without. Meatless Monday and a Little Whine

As you may be able to tell, Meatless Monday was not extra creative today - but it was meatless. Tonight's dinner consisted of spinach and cheese ravioli that I purchased at Costco topped with Mario Batali pasta sauce, also purchased at Costco. I made a salad and steamed some broccoli and called it a night. I did manage to grate some nice parmesan cheese onto the pasta and broccoli. It was actually quite tasty, just not terribly inspired.
