Eggs with Italian Inspired “Hash” and a Little Something Extra

Independence Day – Family, Food & Fun

Independence Day is one of my favorite holidays. I love everything about it - what it celebrates, how it is celebrated, the weather, the fireworks.... Sweet and Spicy Southwest Salad

I went shopping last week and planned to prepare meals for the week, but the weekend took a strange turn which caused me to have to go into work leaving me no time to cook.  Today I took stock of what I had in the refrigerator and pantry from last week. What to do with those holiday leftovers?

The women in my family have an unnatural fear of not having enough food at gatherings. I am not sure where this comes from since we generally always have way more than we need. Meatless Monday

It has been pretty hot the past couple of weeks so we have been eating a lot of salads and sandwiches for dinner.  Not a lot of actual cooking has been going on in my house. It’s Ash Wednesday – Let’s Eat Potato Soup!

Sunday Dinner on Monday and a Dog

Another weekend sped by. This one had the added twist of Tom and I going to the animal shelter to look for a dog. We went looking for a standard poodle there and found a puggle that we thought might be the one for us only to fall in love with a border terrier mix named Ann Maire. Meatless Monday Returns!

Today was a truly meatless Monday.  I have been trying to work through some of the food that seems to have collected in my pantry, freezer and refrigerator so in addition to working the meatless angle, I was trying to use things that I had on hand.
