Simple and Quick Recipes

During the summer I am all about keeping it simple when it comes to cooking.  I also like to use fresh and fun ingredients.  I want my food to taste like summer.  This past week I put together a couple of dishes that taste like summer to me.  Give them a try to see what you think.

Tropical Oatmeal
Serves 4

Coconut Milk
1/4 cup dried, flaked coconut
2 chopped bananas
1/8 cup chopped macadamia nuts (or other nuts)

Follow directions on oatmeal to make 4 servings substituting coconut milk for water/milk. Use your favorite type of oats (Coach’s Oats, Irish Oats, Rolled Oats – whatever). Follow the directions to make the oatmeal, stirring in the coconut, bananas and nuts about halfway through the cooking time. I also stir in a few tablespoons of ground flax seed and a little brown sugar or Splenda Brown Sugar Blend.

Really simple and so good.

Corn, Zucchini and Feta Salad

4-6 ears of corn
2-3 Zucchini
1 small sweet onion
2 Limes
1/2 cup Feta Cheese
1 Bunch Cilantro
Olive Oil
Salt and Pepper
Chili Powder or Jalapeño Pepper to taste

Cook the corn in the manner you like best (steam, boil, grill) or use left over cooked corn. Once cooked and cooled, cut it off the cob and set it aside. Slice the zucchini the long way. Spray with olive oil spray and grill until tender crisp. Cut into small cubes and set aside. Finely chop the onion and jalapeño (if using). Chop the cilantro.

In a large bowl toss all of the vegetables, cilantro, crumbled feta, salt and pepper, chili powder or jalapeno with the juice of the 2 limes and 2 tablespoons of olive oil. Enjoy!

I made a large bowl of this the other day. When I served it the second time I added diced mango and avocado to it. Changed it up just enough to keep it interesting.
