Meatless Monday

Meatless Monday dinner got a little sidetracked. I decided to drag my husband out for a short walk in the Dana Point Harbor and we came upon some great Polynesian boats sailing into the harbor so we took some time to take them in. We decided to get some meatless pizza for dinner after watching the boats.  The  original plan was to have veggie omelets at home.  The boats were amazing and so was the pizza.

For lunch I had Black bean, brown rice and mango salad. I made this salad for a potluck last week and people really liked it. It is a nice combination of sweet and spicy.

Black Bean, Brown Rice and Mango Salad

2 cans of black beans drained and rinsed
1 cup of brown riced, cooked (can also use wild rice or quinoa)
1 cup of salsa verde
1 jalapeno pepper, minced fine
3 scallions, white and tender green part sliced
1 bunch of cilantro, chopped
1-2 large mangos, cubed
Juice of 2 limes
1 tsp EVOO
salt and pepper, to taste

Mix all ingredients together in a pretty bowl and serve. It is best after it has been allowed to sit for about 30 minutes (or more) so the flavors can blend.
