Eggs with Italian Inspired “Hash” and a Little Something Extra

When it is hot outside, I don't feel like cooking.  Fancy is out of the question.  What's on hand is what's going to be on the plate.  It is August and I am in Southern California so it is hot!  My organic farm box came this week and in it I found leeks, chard and mushrooms.  I had eggs, pine nuts, pasta sauce and parmesan cheese on hand so we didn't have to go hungry or go out. Woot woot! This dish can be modified a million different ways so give it a try the next time you need something … [Read more...]

Vegetable Frittata with a Potato Crust

I love getting interesting things in my organic farm box.  Recently one of the offerrings was sea beans, which I had never tried before.  I jumped on the opportunity to try some out.  When they came, they looked a little like really skinny grean beans.  They had a salty slightly bitter taste when they were raw.  I decided to use them in a frittata with some of the other things that I recieved in my box and was pleased with the results.  The sea beans lost their bitterness when cooked and added … [Read more...]

Roasted Sunchoke Chips

I receive a farm box from Farm Fresh to You every two weeks. I enjoy the boxes very much not only because the contain great fresh organic produce, but also because I feel like I am in some small way supporting local farmers. I come from farming people so it makes me feel good to support farmers. Another thing I really enjoy about getting the boxes is trying things I haven't tried cooking before. Recently I decided to try sunchokes, also known as Jerusalem artichokes, in my farm box. They are … [Read more...]

Wild Mushroom, Roasted Potato, Chard and Ham Frittata

As the weather turns cooler, I crave comfort food - warm and hearty dishes. Eggs and cheese feel like home to me. Using fresh, seasonal produce like chard and wild mushrooms makes me feel somehow more in touch with nature and the season. I try to find ways to lighten dishes up. Using mostly egg whites along with fat free dairy helps. The vegetables and roasted potatoes in this dish add nutrients, bulk and flavor with not a lot of additional calories. I like a hearty serving so adding hulk … [Read more...]

Pasta with Pumpkin, Pine Nuts and Canadian Bacon

I may have mentioned once or twice that I love pumpkins.  I love the way they look and I love the way the taste.  I got some pumpkins for my porch to welcome fall. I also used some pumpkin in my cooking for the week.  A new recipe I found and adapted  was our Sunday dinner.  I found the original recipe on Cozi which I have been using to get organized.  I changed the recipe and made it my own.  Give it a try, you might like it too! Pasta with Pumpkin, Canadian Bacon and Pine … [Read more...]

Independence Day – Family, Food & Fun

Independence Day is one of my favorite holidays. I love everything about it - what it celebrates, how it is celebrated, the weather, the fireworks.... We are lucky enough to live on a hill overlooking the Pacific Ocean. From our back yard we have a great view of the fireworks display shot from a barge just outside of Dana Point Harbor.  We can also see the display put on by San Clemente to the south and Laguna Beach and Corona del Mar to the north.  On  a few exceptionally clear 4th of July … [Read more...]

Meatless Monday – Light and Fresh Eggplant Parmesan

In my ongoing  and sometimes seemingly futile effort to eat well and enjoy food that tastes good, I created a new recipe to satisfy my craving for Eggplant Parmesan without totally blowing my diet.  I made my version meatless because I happened to have meatless Italian sausage on hand.  It's an easy recipe - I cheated and used bottled pasta sauce. it was quite tasty and did not break the calorie bank.  I hope you enjoy it as much as I did.  If you want to indulge go for it - use real italian … [Read more...]

Meatless Monday – Huevos Rancheros with a Quinoa Twist

As part of my quest to improve my health and  lose some weight I've been trying to cook more and eat out less.  I also am trying to eat more vegetarian meals and less red meat.  In order to do this, I have been reviewing cook books and recipes for inspiration for new dishes. I recently came up with this recipe which is a take on Huevos Rancheros.  We had it for a couple of dinners and lunch (since we are only 2 people and it serves 6) but would also make a tasty breakfast or brunch.  It was … [Read more...]

Golden Squash Bisque + 1 = Yum

Have you ever found yourself with three squash and no idea where they came from?  I must not be the only one this happens to.  It happened recently and I wanted to use them before they went bad - they were to pretty not to use.  I decided to make a squash bisque.  It turned out quite nice.  I decided to serve it with cinnamon and salt spiced edamame and egg sandwiches.  It was a  cozy, warm meal on a cool winter evening. Golden Squash Bisque Serves 4 1 Butternut Squash 1 Acorn … [Read more...]
