Amaretto Twisted Key Lime Pie

I have been a fan of key lime pie since I first had it at the Blond Giraffe while visiting Key West, Florida about 15 years ago.  The Blond Giraffe moved out of Key West some years ago which made me sad, but they have moved back to Florida.  You can also order the pies online - or, you can make your own! A few years ago I took to trying my hand at making my own version of key lime pie.  I sought out key limes - tiny little buggers - and juiced them.  I found a recipe and tweaked it (of … [Read more...]

Family Traditions and a Recipe

If you don't have some family traditions that you keep going year after year you need to get busy and develop a few! My family started a tradition of baking and candy making at Christmastime about 15 years ago. Since we subscribe to the "go big or go home" mentality, our baking and candy making consists of 3 days and results in well over 100 pounds of candy and cookies. This year we used over 45 pounds of chocolate and at least 25 pounds of nuts. We work on it for about 12-16 hours each … [Read more...]

Let’s Make Pie!

A couple of weeks ago we had a pie baking contest at work.  I was a bit apprehensive about entering a pie baking contest since I don't often bake pies. Two of my friends were organizing the contest and I wanted to be supportive sooooo I entered the contest.  I bought a book and searched Pinterest for the perfect pie recipe. I found several pies that I thought I wanted to try - Cheddar-Crust Apple Pie; Pear-Raspberry Pie; Pumpkin Chocolate Tart; Pear, Fig and Walnut Pie, Key Lime - so many … [Read more...]

Some of the tricks and treats may be annonmous and others will not.  I am not applying many rules to this challenge - just that I spend the month passing along tricks and treats to … [Read more...]

Vanilla Cinnamon Marscarpone Gelato – A New Summer Favorite!

I love ice cream - LOVE IT.  A few years ago, my mother bought me the ice cream maker attachment for my Kitchenaide mixer. I have not used it much and I was determined to find some ice cream recipes this summer and try to lighten them up. I thought that the 4th of July might be a good time to try a recipe out.  Who better to make gastronomic guinea pigs than your own family - right?  I previously tried to make a low fat version of a mint chip ice cream from a mix - not so good.  I pulled out … [Read more...]

Brownie Cookie Combo – Cupbrookies

For my Dad's birthday i wanted to make a treat for after dinner out.  I had a brownie mix and some cookie dough.  I decided to put them together in a muffin tin and they turned out to be delicious. Here is how you do it.  Make a batch of brownies, either from scratch or a mix.  I used a mix, but substituted coconut oil for butter (just use 3/4 or the amount called for).  I added some chopped macadamia nuts so the brownies had slight coconut macadamia nut flavor.  Next, make a batch of your … [Read more...]

Easy Popcorn Balls

I came upon an easy recipe for popcorn balls recently and tweaked it a bit at the request of my mother who really likes white chocolate and almonds. I have made a few variations of this recipe and all have been a hit. The original recipe is from Martha Stewart's Everyday Food magazine. Easy Kicked Up Popcorn Balls 16-18 cups freshly popped popcorn 2 Tbs Butter 1 bag mini marshmallows 1/2 - 1 cup chopped almonds 1/2 bag white chocolate chips Salt Melt butter in a large pot. Add … [Read more...]

Meatless Monday Returns!

Today was a truly meatless Monday.  I have been trying to work through some of the food that seems to have collected in my pantry, freezer and refrigerator so in addition to working the meatless angle, I was trying to use things that I had on hand. For brunch I made a scramble with 1 eggs, 3 egg whites, red onion, spinach and some baby brie.  All things I had on hand.  I sliced up some fresh strawberries, sprinkled them with a little Splenda and popped an english muffin (whole wheat) I had on … [Read more...]

Try This at Home – Cupcakes!

We are having a bake sale at work tomorrow to raise funds for our Resident's Benefit Fund which funds things like Special Olympics, Very Special Arts, special activities and gifts for our residents. I took this as an opportunity to try out some new cupcake recipes. The recipes I chose were inspired by some I found in the Food Network Magazine January/February 2010 edition (Volume 3, Number 1). These recipes are based on popular candy bars. I did not follow the recipes exactly since they called … [Read more...]
