Roasted Sunchoke Chips

I receive a farm box from Farm Fresh to You every two weeks. I enjoy the boxes very much not only because the contain great fresh organic produce, but also because I feel like I am in some small way supporting local farmers. I come from farming people so it makes me feel good to support farmers. Another thing I really enjoy about getting the boxes is trying things I haven't tried cooking before. Recently I decided to try sunchokes, also known as Jerusalem artichokes, in my farm box. They are … [Read more...]

Independence Day – Family, Food & Fun

Independence Day is one of my favorite holidays. I love everything about it - what it celebrates, how it is celebrated, the weather, the fireworks.... We are lucky enough to live on a hill overlooking the Pacific Ocean. From our back yard we have a great view of the fireworks display shot from a barge just outside of Dana Point Harbor.  We can also see the display put on by San Clemente to the south and Laguna Beach and Corona del Mar to the north.  On  a few exceptionally clear 4th of July … [Read more...]

Golden Squash Bisque + 1 = Yum

Have you ever found yourself with three squash and no idea where they came from?  I must not be the only one this happens to.  It happened recently and I wanted to use them before they went bad - they were to pretty not to use.  I decided to make a squash bisque.  It turned out quite nice.  I decided to serve it with cinnamon and salt spiced edamame and egg sandwiches.  It was a  cozy, warm meal on a cool winter evening. Golden Squash Bisque Serves 4 1 Butternut Squash 1 Acorn … [Read more...]

Sweet and Spicy Southwest Salad

I went shopping last week and planned to prepare meals for the week, but the weekend took a strange turn which caused me to have to go into work leaving me no time to cook.  Today I took stock of what I had in the refrigerator and pantry from last week. I went about cooking for the week ahead.  This week I was not interrupted and ended up with several meals prepared for the week. Tonight we had tacos and the salad I made up using ingredients that I had on hand.  It was quite tasty.  I hope … [Read more...]

Meatless Monday Returns!

Today was a truly meatless Monday.  I have been trying to work through some of the food that seems to have collected in my pantry, freezer and refrigerator so in addition to working the meatless angle, I was trying to use things that I had on hand. For brunch I made a scramble with 1 eggs, 3 egg whites, red onion, spinach and some baby brie.  All things I had on hand.  I sliced up some fresh strawberries, sprinkled them with a little Splenda and popped an english muffin (whole wheat) I had on … [Read more...]

Mostly Meatless Monday

Even though I feel like I ate nothing but fruit, rice and beans in Costa Rica and I was pretty active, I managed to gain about five pounds. Now that I am back home it is time to get back on track with my diet and exercise. Something I read on the Food Network Blog inspired me to try some meatless recipes so starting today I am going to try more meatless recipes. To start, I am going to try to focus on meatless Mondays, but because I got this inspiration after lunch today (and I had chicken at … [Read more...]
