I Like Soup!

It is a fact. I am a big fan of soup. Thick soup, thin soup, creamy soup, chunky soup, all kinds of soup. It is warm, filling and depending on the soup, it can be low-calorie or decadent. It often tastes better a day or two after it is made so it is a great make ahead meal option. The other day I decided I wanted to make albondigas soup. I read several recipes and came up with my own version. It turned out to be very tasty. A little spicy and very flavorful. Give it a try. Put your own spin … [Read more...]

What to do with those holiday leftovers?

The women in my family have an unnatural fear of not having enough food at gatherings. I am not sure where this comes from since we generally always have way more than we need. This doesn't matter, the fear remains. As a result, we always end up with leftover food. Usually a lot of it. This Christmas was no exception. I am not a huge fan of left overs in original form. I like to figure out things to do with leftover food to transform it into something new. This year my leftover beef … [Read more...]

Beef Tenderloin with Port Mushroom Sauce – New Year’s Day Dinner?

Well Hello There!  I have missed you. October through the end of the year is always the busiest for me.  In addition to the holidays that occur during these months, my wedding anniversary and birthday also happen.  This year I was determined to try to stay as relaxed as possible and enjoy the ride.  As a result, I did not do much writing over the last few months.  I guess I gave (all 3 of) you a break from reading my blog.  I hope you enjoyed your time off because I plan to get back into … [Read more...]

Easy Popcorn Balls

I came upon an easy recipe for popcorn balls recently and tweaked it a bit at the request of my mother who really likes white chocolate and almonds. I have made a few variations of this recipe and all have been a hit. The original recipe is from Martha Stewart's Everyday Food magazine. Easy Kicked Up Popcorn Balls 16-18 cups freshly popped popcorn 2 Tbs Butter 1 bag mini marshmallows 1/2 - 1 cup chopped almonds 1/2 bag white chocolate chips Salt Melt butter in a large pot. Add … [Read more...]

Om So Good – Pumpkin Pie Overnight Oats

I have been making overnight oats for my breakfast.  I like these for a few reasons - they are a cold alternative to hot cereal; they include protein, carbohydrates and fiber to keep you full;  and you can make them the night before for a no hassel breakfast in the morning. I started making them with bananas and berries this summer.  Now that it is autumn my love for pumpkin has re-emerged.  Here is the most recent rendition of the recipe.  I made this for my breakfast on the way to … [Read more...]

Meatless Monday

It has been pretty hot the past couple of weeks so we have been eating a lot of salads and sandwiches for dinner.  Not a lot of actual cooking has been going on in my house. My organic farm box came Thursday and included a variety of vegetables.  I looked in the refrigerator to see what else might be hanging around and discovered that I still had half a jar of homemade tomato sauce.  I challenged myself to come up with something new to cook for dinners this week that did not require turning … [Read more...]

Tuesday’s Tomato Sauce

My dad grows amazing tomatoes in his garden every year. He coaxes them to life in little containers, often in the living room, until they are old and strong enough to move outside into the cruel Southern California weather. He waters and tends them with care until they are beautiful thriving plants with gorgeous red tomatoes, and then he promptly gets into his RV and takes off with my Mother for the summer before he can truly enjoy all of the fruits of his labor. More tomatoes for me! I love my … [Read more...]

Simple and Quick Recipes

During the summer I am all about keeping it simple when it comes to cooking.  I also like to use fresh and fun ingredients.  I want my food to taste like summer.  This past week I put together a couple of dishes that taste like summer to me.  Give them a try to see what you think. Tropical Oatmeal Serves 4 Oats Coconut Milk 1/4 cup dried, flaked coconut 2 chopped bananas 1/8 cup chopped macadamia nuts (or other nuts) Follow directions on oatmeal to make 4 servings substituting … [Read more...]

Accidentally Meatless on Kauai

Today starts the second week of vacation for me. We have been on Kauai since last Tuesday and aside from a bit of a head cold, it has been fabulous. I have given up wearing a watch and have mostly not been doing my hair or make-up. These may sound like minor things, but for me they are kind of big things. I have been relaxing and having a lot of fun. I have been trying to find a balance between my need to see and do everything with my equally important need to relax and de-stress. So far I … [Read more...]

Cinco de Mayo Made Easy – My Way

My friend posted some recipes on her blog for a carne asada and a "salad" that her husband, who happens to be a professional chef, makes. I have tasted both of his creations and they are excellent.  I can never leave well enough alone so I made a few changes to the recipes to make them my own.  I also decided to do a grilled tilapia to use for tacos as well.  Please check out the originals too!  Carne Asada Style Filet Mignon for Tacos {serves 4} 1 lb filet mignon (you can also use flank … [Read more...]
