Meatless Monday Returns!

Today was a truly meatless Monday.  I have been trying to work through some of the food that seems to have collected in my pantry, freezer and refrigerator so in addition to working the meatless angle, I was trying to use things that I had on hand. Meatless Monday

I can't think of anything that makes me think of fall more than pumpkin. I like all things pumpkin - pumpkin pie, pumpkin lattes, pumpkin smoothies, pumpkin ice cream, pumpkin muffins, pumpkin soup - you get the idea. I like to play with recipes. I like to find a recipe, deconstruct it and put it back together again. Today's meatless Monday recipe is one of those cases where I started with a recipe, used it for inspiration and then changed it up. Meatless Monday

Today's meatless dish is a lighter, simpler alternative to chiles rellenos which are typically fried.  Don't get me wrong, traditional chiles rellenos are delicious.  If you have no concerns about fat or calories, go for the real thing.  For me they are a nice treat sometimes.  These stuffed chiles give you similar flavors and textures, with a fraction of the fat and calories. Meatless Monday

Todays meatless creation was Brazilian Black Beans. I served the dish with brown rice and garnished with low fat cheese, avocado, heirloom tomatoes, scallions, cilantro, chili paste and lime. Meatless Monday dinner got a little sidetracked. I decided to drag my husband out for a short walk in the Dana Point Harbor and we came upon some great Polynesian boats sailing into the harbor so we took some time to take them in. I hardly ever follow a recipe as written and todays is no exception. This recipe was inspired by one I saw in "Cooking Light - Readers' Top-Rated Recipes". Meatless Monday and a Little Whine

As you may be able to tell, Meatless Monday was not extra creative today - but it was meatless. Tonight's dinner consisted of spinach and cheese ravioli that I purchased at Costco topped with Mario Batali pasta sauce, also purchased at Costco. I made a salad and steamed some broccoli and called it a night. I did manage to grate some nice parmesan cheese onto the pasta and broccoli. It was actually quite tasty, just not terribly inspired. I love the Food Network.  Left to my own devices I would  watch it for hours and hours on end.  I am not often left to my  own devices so usually I watch the Food Network when I am folding laundry, changing the sheets on the bed or involved in some other equally stimulating household chore.
