Eggs with Italian Inspired “Hash” and a Little Something Extra

Vegetable Frittata with a Potato Crust

Meatless Monday – Light and Fresh Eggplant Parmesan

It has been pretty hot the past couple of weeks so we have been eating a lot of salads and sandwiches for dinner.  Not a lot of actual cooking has been going on in my house. Tuesday’s Tomato Sauce

My dad grows amazing tomatoes in his garden every year. He coaxes them to life in little containers, often in the living room, until they are old and strong enough to move outside into the cruel Southern California weather. Accidentally Meatless on Kauai

Today starts the second week of vacation for me. We have been on Kauai since last Tuesday and aside from a bit of a head cold, it has been fabulous. Meatless Monday – Spicy Stir Fry with Tofu

My husband bought me a T-Fal Actifry for my birthday. So far I really like it.  At first I was a little dubious about it since it did not appear to be that sturdy, but so far it has cooked up a storm with no problems at all. Meatless Monday and a bonus recipe!

A couple of months ago I bought a giant jar of gourmet dried bean mix and one of gourmet dried lentil mix.  I have taken these jars on as a project.  I have been trying different soups and stews made with them.
