Tastes Like Autumn – Pumpkin Soup!

Did I mention that I love pumpkin?  It's a bonus that pumpkin is a nutritional powerhouse.  It is packed with vitamin A, has a fair amout of fiber, is a good source of beta carotene, has more potassium than bananas and is a good source of vitamin C. Sweet and Spicy Southwest Salad

I went shopping last week and planned to prepare meals for the week, but the weekend took a strange turn which caused me to have to go into work leaving me no time to cook.  Today I took stock of what I had in the refrigerator and pantry from last week. What to do with those holiday leftovers?

The women in my family have an unnatural fear of not having enough food at gatherings. I am not sure where this comes from since we generally always have way more than we need. Meatless Monday

It has been pretty hot the past couple of weeks so we have been eating a lot of salads and sandwiches for dinner.  Not a lot of actual cooking has been going on in my house. Accidentally Meatless on Kauai

Today starts the second week of vacation for me. We have been on Kauai since last Tuesday and aside from a bit of a head cold, it has been fabulous. Meatless Monday – Spicy Stir Fry with Tofu

My husband bought me a T-Fal Actifry for my birthday. So far I really like it.  At first I was a little dubious about it since it did not appear to be that sturdy, but so far it has cooked up a storm with no problems at all. Sunday Dinner on Monday and a Dog

Another weekend sped by. This one had the added twist of Tom and I going to the animal shelter to look for a dog. We went looking for a standard poodle there and found a puggle that we thought might be the one for us only to fall in love with a border terrier mix named Ann Maire. Meatless Monday and a bonus recipe!

A couple of months ago I bought a giant jar of gourmet dried bean mix and one of gourmet dried lentil mix.  I have taken these jars on as a project.  I have been trying different soups and stews made with them.
