Eggs with Italian Inspired “Hash” and a Little Something Extra

Vegetable Frittata with a Potato Crust

Wild Mushroom, Roasted Potato, Chard and Ham Frittata

As the weather turns cooler, I crave comfort food - warm and hearty dishes. Eggs and cheese feel like home to me. Using fresh, seasonal produce like chard and wild mushrooms makes me feel somehow more in touch with nature and the season. I try to find ways to lighten dishes up. I may have mentioned once or twice that I love pumpkins.  I love the way they look and I love the way the taste.  I got some pumpkins for my porch to welcome fall. Meatless Monday – Light and Fresh Eggplant Parmesan

Golden Squash Bisque + 1 = Yum

Have you ever found yourself with three squash and no idea where they came from?  I must not be the only one this happens to.  It happened recently and I wanted to use them before they went bad - they were to pretty not to use.  I decided to make a squash bisque.  It turned out quite nice.  I decided to serve it with cinnamon and salt spiced edamame and egg sandwiches.  It was a  cozy, warm meal on a cool winter evening.
