Brownie Cookie Combo – Cupbrookies


For my Dad’s birthday i wanted to make a treat for after dinner out.  I had a brownie mix and some cookie dough.  I decided to put them together in a muffin tin and they turned out to be delicious.

Here is how you do it.  Make a batch of brownies, either from scratch or a mix.  I used a mix, but substituted coconut oil for butter (just use 3/4 or the amount called for).  I added some chopped macadamia nuts so the brownies had slight coconut macadamia nut flavor.  Next, make a batch of your favorite cookies.  I used pre-made toll house cookie dough, but I think peanut butter cookie dough would be great in this too.  If I used peanut butter cookie dough, I would skip the macadamia nuts in the brownies and I might top each one with a peanut butter cup when they were still warm, but I digress.

You can either make these bite sized in a mini muffin tin or make full sized in a regular muffin tin.  Pre-heat the over to 350, line you tins with cupcake papers and spray lightly with cooking spray.  Fill the tin half fill with brownie mix.  Top with an equal amount of cookie dough.  (I used a medium sized scoop to scoop the brownie batter and cookie dough into my regular sized tins and a teaspoon to scoop into the mini tins).  Pop  them into the over and back for about 25 minutes (for regular size and about 13 minutes for mini).  Take them out of the oven when they are done (don’t over bake) an let cook for 10 minutes before removing rom the pan.

They are the perfect combination of a cookie and a brownie.  They would be fantastic served warm and topped with a scoop of vanilla ice cream.  Give them a try and enjoy!
